At just 6.3% alcohol, it sits somewhere between a traditional cider and a vibrant fruit wine, with plenty of natural freshness and an easy-drinking character.\u003c\/p\u003e\u003cp\u003eWhole plums are destemmed, crushed and fermented with their flesh, allowing the fruit to contribute plenty of colour, flavour and texture. After the primary fermentation, the fruit is pressed and fresh Hanfu apple juice is added before a second fermentation in pressurised tanks creates the natural sparkle. Fermentation is stopped at the desired level of sweetness before the cider is clarified, filtered and bottled.\u003c\/p\u003e\u003cp\u003eThe result is aromatic, juicy and refreshing, with ripe plum, peach and dark berry notes on the nose and palate. There is a lovely balance between the generous fruit sweetness and bright acidity, with a gently tangy finish that keeps things fresh rather than cloying. The component from 2022 was aged until fully fermented for one year in a 400 litre Calvados barrel, still rich in Calvados tannins. It was then assembled with still fermenting juice from 2023 in a 50\/50 assembly.
