The grapes are directly pressed and naturally fermented with indigenous yeasts before being patiently aged in old barriques. The cellar work is deliberately hands off, with the wine bottled \u003cstrong\u003eunfined, unfiltered and without sulphur additions\u003c\/strong\u003e.\u003c\/p\u003e\n\u003cp\u003eValentin’s wines are deeply connected to the challenges and possibilities of Jura viticulture. He has also experimented with frost resistant hybrid varieties in response to increasingly difficult growing conditions, and has written extensively about the future of viticulture in his book \u003cem\u003eUn Autre Vin\u003c\/em\u003e.\u003c\/p\u003e\n\u003cp\u003eThe \u003cstrong\u003eSaint Savin 2022\u003c\/strong\u003e is a beautiful example of what Morel does so well. \u003cstrong\u003eGenerous stone fruit and ripe peach\u003c\/strong\u003e sit alongside citrus, fresh orchard fruit and a distinctly mineral, almost chalky character. There is richness on the palate, but the wine remains incredibly fresh and precise, with a long, focused finish.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eA serious Jura Chardonnay with generosity, energy and mineral tension.\u003c\/strong\u003e The kind of bottle that can happily sit alongside roast chicken or richer food, but has more than enough detail to demand your attention on its own. Ouille means the barrels are regularly topped up, keeping the wine protected from flor and giving a completely different expression from a traditional Vin Jaune.
