Dash Farms was planted in 1999 on the southern granitic slopes of Mount Alexander, at more than 450 metres elevation. The lean, weathered granite soils and cool, elevated site allow the fruit to develop concentration and flavour while retaining the natural acidity and freshness that define Cooper’s wines.\u003c\/p\u003e\n\u003cp\u003eThe 2025 vintage was hand harvested and carefully sorted before the whole bunches were partially crushed and gently pressed. The juice was settled overnight before fermentation and ageing in a combination of French oak, including Stockinger and Burgundian barrels. It then spent a further four months in stainless steel on fine lees before bottling unfined and unfiltered. At 12.5% alcohol, the wine balances generosity with remarkable precision.\u003c\/p\u003e\n\u003cp\u003eThere is plenty of detail here: crushed rock, lemon and grapefruit rind, ripe nectarine and subtle spice lead into a dense, finely textured palate. Lemon curd and baked apple sit alongside briny, talc-like minerality, savoury phenolics and a creamy lees-derived texture. The finish is long and energetic, with a fine acid line bringing everything back into focus.\u003c\/p\u003e\n\u003cp\u003eA serious Australian Chardonnay with both power and restraint. The combination of cool conditions, altitude and low-vigour basalt soils gives the site remarkable intensity while retaining the freshness and finesse that define Macedon Pinot Noir.\u003c\/p\u003e\n\u003cp\u003eThe 2025 vintage is a particularly compelling expression of the vineyard. At 13% alcohol, it has the concentration and depth of Doug’s Vineyard without sacrificing the cool, elegant character that is central to Joshua Cooper’s style.\u003c\/p\u003e\n\u003cp\u003eAromatically, it is deep and perfumed, with concentrated raspberry and blackberry alongside rose petals, exotic spice and subtle herbal notes. The palate is beautifully poised, combining generous dark red fruit with fine, velvety tannins and bright acidity.
