It develops further notes with more time in the glass, white flowers. There's more clay here and more organic matter than in Moncerbal, so the cooler nights don't manage to cool the soil down; the grapes have a more steady ripeness, and the wines are a little more generous. 3,752 bottles, 86 magnums and some larger formats produced. From very early on, Moncerbal shone and felt to be among the finest vintages for this paraje. 2021 was an atypical year, cooler but with a warm and dry end of the season. They harvested some grapes at the end of August, and then they had to stop because the grapes wouldn't ripen! So, Pétalos has only 13.5% alcohol. Some wines have a reductive character; it was a cooler and dry year, and the wines show that character, continental and cold, despite the heat in July and August. The wines are juicy and aromatic, a lot fresher than they anticipated. The wines have contained alcohol (all around 13.5%) and a narrower profile. It should be a long-lived vintage, perhaps not as juicy as the 2018s but with very good balance and freshness. Now from bottle and with the perspective of time, the wines are evolving nicely, perhaps not reaching the heights of 2018, but with elegance and grace, slowly. Starting in 2021, all the wines except Pétalos are certified organic.

2022 was a very challenging year, but surprisingly, the wines are more balanced and better than what they expected. The alcohol is lower than expected, the vines got blocked, it was very warm and dry, or at least the alcohol didn't go that high, but the acidity started dropping. Yields were high, and the white grapes were very good; they used a lot of white grapes, almost to the allowed 10% to 12%, when they normally use between 6% and 8%. It is built from a multi-vintage blend centred on the 2022 base year (around 65%), complemented by reserve wines from the two preceding vintages, including a substantial perpetual reserve component (approximately 40% of the blend). The cépage is split across 35% Pinot Noir from Montagne de Reims (Ludes, Trépail and Ormes), 35% Chardonnay from Montagne de Reims and Vallée de la Marne, and 30% Meunier from Mareuil-le-Port. The average vine age is around 40 years, contributing concentration and textural depth.

The stylistic core of this cuvée is its balance between tension and breadth. The cooler, chalk-driven sites of Ludes and Trépail provide precision and verticality, while the Marne fruit and reserve wines bring mid-palate richness and continuity. This is very much a structural NV Champagne, designed to express both site diversity and cellar precision rather than simple fruit-forwardness.

Vinification is highly traditional but exacting: natural fermentation in barrel, élevage in a combination of barrel and tank, followed by approximately 36 months sur lattes. The wine is hand-disgorged and finished with a low dosage of around 5 g/L, preserving tension and mineral definition. Recent refinements—including the exclusion of tailles and increased emphasis on Chardonnay from Trépail—have further sharpened acidity and lowered pH, contributing to greater precision and clarity.

The 2022-based release shows ripe citrus and stone fruit aromatics—nectarine, orange zest, brioche and subtle spice—over a tightly coiled, chalky frame. The palate is medium to full-bodied with notable density, but the driving line of acidity keeps everything focused and energetic, finishing long with a saline, mineral edge.

“The NV Brut Réserve is the foundational wine at Bérêche, and the latest release is based on the 2022 vintage, incorporating a 40% perpetual reserve component, uniting the freshness of the northern slopes and the maturity of the hot, dry vintage. Bursting from the glass with aromas of nectarine, orange zest and brioche, it's medium- to full-bodied and ample, with considerable density, underpinned by racy acidity and concluding with a chalky finish. The Brut Réserve has seen the most refinements in recent years as it no longer incorporates tailles and now features Chardonnay from Trépail; technically, this means that the pH is lower and the acidity is higher. The vineyards are farmed biodynamically, and the geological mix—chalk, chalky clay (marl), with pockets of flint and schist—creates a dual expression of crystalline tension and subtle textural breadth.

The chalk-dominant soils drive the wine’s hallmark saline, citric intensity and linear drive, while the marl components contribute a more rounded fruit core and mid-palate presence.
