Philippe Bornard has retired and his son Tony has been running the operation since 2017, maintaining the same meticulous approach in both vineyard and winery. Tony works 11 hectares of vines planted to Trousseau, Ploussard, Pinot Noir, Chardonnay, Savagnin, and Melon à Queue Rouge across the Arbois-Pupillin and Cotes du Jura appellations, farming with certified organic practices and a deep focus on soil health and vine longevity.\u003c\/p\u003e\u003cp\u003eLes Chassagnes is located in the Côtes du Jura, just outside Pupillin in the commune of Buvilly, though Tony has worked outside the appellation for several years and recent vintages are Vin de France. The vines were planted in 1990 on easterly-exposed Keuper marl from the Triassic period. This is an ouillé (topped-up) Savagnin, and in the case of the 2018 that topping-up process continued for six years. The directly-pressed juice was initially held in vats before being transferred across two foudre (one old, one new), a 500-litre barrel, and a 700-litre tank, then finally assembled for bottling in August 2024. Nutty and complex yet still fresh, with a distinct clay character Tony himself noted. No additions. Certified organic.
