Tony works 11 hectares of vines planted to Trousseau, Ploussard, Pinot Noir, Chardonnay, Savagnin, and Melon à Queue Rouge across the Arbois-Pupillin and Cotes du Jura appellations, farming with certified organic practices and a deep focus on soil health and vine longevity.\u003c\/p\u003e\u003cp\u003eLe Ginglet is the Bornard Trousseau made for joyful, not-too-serious drinking, its name derived from \"guiguer\", meaning to jump. Sourced from red marl vineyards in Pupillin, the 2022 was harvested on 19 September and 100% destemmed, then macerated for three weeks with once-daily pump-overs and light punch-downs. Aged predominantly in tank (90%) with a small proportion in old barrels, it was bottled unfiltered after nine months with no additions.
