Rather than making a straightforward aromatic Muscat, the brothers give the wine around one month of maceration on whole bunches, allowing the skins to bring texture, structure and a subtle tannic grip. It is then fermented with indigenous yeasts and aged for 10 to 12 months in a combination of old barrels, amphora and concrete, then bottled without fining or filtration.\u003c\/p\u003e\u003cp\u003eThe result is aromatic but far from sweet or heavy. Bergamot, orange peel, fresh citrus, white flowers and herbs sit alongside a gentle tea-like character.
