This 100% Savagnin comes from the Arbois appellation, sourced from Rolet's parcels around Montigny-lès-Arsures, particularly the lieux-dits Gaillard and Château Gimont, where grey Lias marl dominates the soils. These marl soils are particularly well suited to Savagnin, giving the variety its characteristic combination of aromatic intensity, structure and mineral freshness.\u003c\/p\u003e\u003cp\u003eThe important word here is Ouillé. Unlike Vin Jaune, where Savagnin is deliberately exposed to oxygen and develops under a veil of yeast, ouillage means the barrels are regularly topped up to minimise oxygen contact. The result is a fresh, pure and fruit-driven expression of Savagnin rather than an oxidative wine. Hand harvested and gently pressed, both alcoholic and malolactic fermentation take place in barrels, followed by around nine months of ageing in oak.\u003c\/p\u003e\u003cp\u003eGreen and yellow apple, pear, lemon zest, white flowers and apricot on the nose, with more savoury notes of almond, subtle spice and gentle oak. The palate is broad and textured but kept firmly in check by bright acidity, with a distinctly saline, stony minerality carrying through to a long, dry finish.
