Chauvet is part of a new generation putting this volcanic corner of France firmly on the radar.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eQui Sait is his 100% Gamay Blanc de Noirs, made from Domaine fruit and bottled as a pét-nat. It is an unusually refined expression of sparkling Gamay, combining the bright, crunchy fruit of the variety with the precision, tension and mineral drive more often associated with serious traditional-method sparkling wines.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe nose is lifted and elegant, with wild strawberry, redcurrant and delicate red berries alongside floral notes and a subtle volcanic minerality. The palate is beautifully taut and energetic, with crisp acidity, fine bubbles and a distinctly saline character. There is real vinous depth beneath the mousse, while the finish is dry, persistent and remarkably clean.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eUnfiltered and made without additives, Qui Sait retains an incredible sense of freshness and spontaneity, but with a level of finesse that elevates it well beyond the typical pét-nat.
