The grapes are hand-harvested and naturally vinified with indigenous yeasts, without fining, filtration or added sulphur. The wine is given a long, gentle élevage, allowing the exceptionally old vines to build depth while preserving the grape's naturally pale, fragrant and ethereal character.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe aromatics are wonderfully lifted, with \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003ewild strawberry, redcurrant and rosehip\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, followed by pomegranate, hibiscus and delicate white pepper. There is also a subtle herbal quality that gives the wine an almost wild, forest-floor character. On the palate it is \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003esilky, fine and incredibly energetic\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, with almost weightless tannins and a beautiful mineral sap.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eDespite its delicacy, there is serious depth here. The fruit is bright and pure, the acidity keeps everything vibrant and the finish is remarkably persistent, returning to ripe red fruit, flowers and spice.
