Originally from Japan, the couple left careers in finance to pursue their passion for wine, studying winemaking in Burgundy before settling in Central Otago. After establishing Sato Wines in 2009, they eventually realised their dream of farming their own vineyard, La Ferme de Sato, in the hills above Cromwell.

Their philosophy is deeply rooted in respect for nature. The estate is farmed organically and biodynamically, with a commitment to biodiversity, living soils and minimal intervention in the cellar. Their wines are made using indigenous yeasts, with a patient, thoughtful approach that allows each vineyard and vintage to express its own character.

Le Chant du Vent, meaning The Song of the Wind, is a beautiful expression of Chardonnay from their windswept estate.
