The 2025 releases are his most refined and complex collection to date, following an uncompromising selection process that dramatically reduced production.\u003c\/span\u003e\u003c\/p\u003e\u003cp\u003e\u003cspan\u003eThe Forreston Chardonnay comes from the Lansdowne Vineyard, planted in 2005 at 420 metres elevation in the Adelaide Hills. Made in tiny quantities, this is Chardonnay with a distinctly savoury and textural personality. Marcell describes the style as filling a gap in the Australian Chardonnay landscape: salty, complex and gently oxidative, with a subtle Jura-like sensibility while remaining unmistakably Australian.\u003c\/span\u003e\u003c\/p\u003e\u003cp\u003e\u003cspan\u003eThe fruit was hand-harvested over three separate passes, with most pressed directly and a small portion receiving three hours of skin contact. Fermentation took place in tank and an old French hogshead before the wine spent 15 months resting on fine lees without racking.
