The fruit was destemmed and pressed into a combination of ceramic eggs and older demi-muids for a cool fermentation, followed by time on lees.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eSavoury and textural but wonderfully fresh, with nashi pear, lemon blossom, ginger, herbs and a lightly salty, nutty character.
