Each variety plays an important role: Cabernet Sauvignon provides structure and cassis-driven intensity, Cabernet Franc brings perfume and savoury complexity, and Merlot adds generosity and softness through the palate. Harvest came around two weeks earlier than average, with healthy crop levels and excellent fruit quality. The warmer conditions allowed the Bordeaux varieties to achieve excellent ripeness while retaining the freshness and elegance that define Sorrenberg's Beechworth wines.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe fruit was naturally fermented and spent four weeks on skins before the wine was matured for 24 months in French oak. It was bottled without fining or filtration, preserving the wine's natural character and detail.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eBlackcurrant and blackberry sit at the heart of the wine, accompanied by subtle notes of white pepper, spice and savoury complexity.
