The focus is firmly on expressing individual sites through organic farming, balanced ripeness and a thoughtful, minimal-intervention approach in the cellar.\u003c\/p\u003e\u003cp\u003eSupera comes from one of the Stefani family's oldest vineyards at The Gate, planted 28 years ago to Cabernet Sauvignon on its own roots. With naturally low, self-regulated canopy growth, the vines ripen their fruit slowly, making this a notably late-picked Cabernet even by Cabernet standards. The 2024 vintage brought wet, cool conditions around harvest, helping preserve freshness and structure in the finished wine.\u003c\/p\u003e\u003cp\u003eDestemmed without crushing to retain whole berries, with a short cold soak before fermentation and frequent punch-downs. A total of 34 days on skins, including a period of post-fermentation maceration. Pressed to French barriques for 12 months, then a further 12 months in larger-format Slavonian oak with light lees throughout. Bottled in April 2026, unfined and unfiltered with only a small addition of sulphur.\u003c\/p\u003e\u003cp\u003eA beautifully poised expression of Yarra Valley Cabernet. Dark berry fruit and cassis with leafy, savoury complexity and fine, persistent tannins. Extended maceration and 24 months of ageing give depth and structure, while the slow-ripening site keeps the profile fresh and lifted.
