Farming just 0.83 hectares without tillage, using cover crops and compost to build soil health at altitude, they are producing some of the most exciting wines to emerge from China in recent years.\u003c\/p\u003e\u003cp\u003eThe 5pm Rosé is an equal blend of Cabernet Sauvignon and Shiraz from Mei-Li-Shi Village at 2,300 metres in Shangri-La. Hand-harvested and directly pressed, the juice fermented over 13 days before ageing in stainless steel for six months. A small addition of 5% Chardonnay is made before bottling, adding lift and freshness.
