The high altitude project of nomadic Chinese winemaker Ian Dai, devoted to crafting wines from cool sites in Gyalthang, Shangri La, Yunnan. This 2022 Chardonnay was fermented with native yeasts and aged for about a year in neutral oak barrels under a veil of flor yeast, a technique that adds subtle nutty and saline complexity without overt oxidative weight, creating a wine with nuance and texture. It offers aromatics of stone fruit, gentle orchard notes and a whisper of salinity, flowing into a palate that feels layered and versatile with a refined, slightly nutty character that reflects both its high altitude terroir and Ian Dai’s experimental, site focused approach.
