La Bouc à Trois Pattes Dernier Voyage au Mal 2023 is a one-off cuvée from an abandoned hamlet in the "mal pays" near Montpellier, in southern France. It is a site defined by harsh conditions — extreme drought, heat stress, and low-yielding old vines — which directly shapes the character and philosophy of this wine.

The blend is unusual and intentionally imprecise, made from Syrah, Muscat de Hambourg (Black Muscat), and very ripe Merlot, with final proportions naturally shifting depending on what the vintage delivers. The Merlot in 2023 suffered severe drought stress, producing very little juice, while Syrah and Muscat de Hambourg contribute very different structural and aromatic profiles.

Winemaking is highly hands-on and intuitive: the Syrah and Muscat de Hambourg are direct-pressed, while whole bunches of Merlot are added into the fermenting juice. The wine then undergoes around three weeks of maceration before being pressed, resulting in a raw, textural, and highly variable expression shaped as much by process as by fruit.

The 2023 vintage is marked by heat and tension. Aromatically, it opens with dark cherry, plum skin, and wild red fruits, layered with lifted floral tones from the Muscat, alongside darker notes of spice, dried herbs, and a slightly feral, earthy edge. There is both perfume and austerity at play.

On the palate it is fluid but irregular in structure — medium-bodied with fine, sometimes uneven tannins reflecting the co-fermentation and vintage conditions. The acidity is bright, giving the wine lift, while the finish carries a mix of fruit, savoury spice, and a subtle mineral dryness.

A wine shaped by extreme conditions and expressive winemaking rather than precision or control. A vivid, slightly chaotic snapshot of a difficult southern French vintage, with both fragility and intensity held in the same frame.
