Forget everything you think you know about Cabernet Sauvignon. This is one of the most surprising and delicious reds we carry, made by pioneering winemaker Ian Dai at Domaine de la Gyalthang, high in the mountains of Ningxia at 2,800 metres altitude. The elevation and cool climate strip away all the weight and density you'd expect from the variety, leaving something altogether more joyful: bright, juicy and almost impossibly easy to drink.

The nose is lifted and fragrant, with fresh red berries, a whisper of cassis and delicate herbal notes rather than the graphite and dark fruit of a classic Cabernet. On the palate it is light-bodied and silky, with fine, barely-there tannins and a refreshing acidity that makes it perfect slightly chilled. Think Beaujolais energy with a Ningxia accent. A genuinely exciting wine from China's new wave of independent producers.
