This Pet Nat feels like sunshine in a glass, light, lively and impossibly easy to keep going back to.

Made from 100% Sauvignon Blanc farmed organically though not certified and machine harvested from the Freeman Vineyard in Hilltops, NSW. Wild fermented through to dryness in stainless steel with a small amount of unfermented juice added to start secondary fermentation and natural carbonation. Bottled by hand, it remains undisgorged and preservative free.

In the glass it is pale gold with lively, playful bubbles. On the nose there are aromas of lemon sherbet, fresh cut grass, nashi pear and a touch of cream.

The palate is crisp, juicy and fresh with lively bubbles carrying citrus zest, orchard notes and a creamy, textural lift. The acidity is bright and uplifting, making it impossible not to pour another glass.

It is playful, refreshing and built to pour. Perfect on its own or with shellfish, light salads or a sunny afternoon.
