Sabi Wabi Semillon Pet Nat 2025

This is one of my favourites, a Pet Nat that just hits the sweet spot, aromatic, clean, tight, but still full of juicy fruit expression.

Made by Peta Kotz in the Hunter Valley, Semillon is at the heart of her Sabi Wabi range. Her approach is lo-fi with minimal intervention, a touch of sulphur at bottling and a mix of alternative vessels that give the wine its complexity and freshness.

In the glass it is a pale golden colour with lively, playful bubbles. On the nose it is lifted and fragrant with citrus, stone fruit and subtle floral notes. The palate is crisp and bright, carrying green apple, lemon zest and white peach with a delicate textural lift from the natural carbonation.

It is clean, vibrant and utterly drinkable, a wine that feels alive yet precise. Perfect chilled on its own or with fresh seafood and light summer dishes.
