William Downie Cathedral Pinot Noir 2025
Bright ruby with a translucent core, Cathedral 2025 is a finely tuned expression of Victorian cool-climate Pinot Noir, shaped by restraint, lift and a quiet sense of detail.
Sourced across King Valley, Yarra Valley and Upper Goulburn, this is a regional blend that captures a broader Australian Pinot snapshot rather than a single site voice. The 2025 season brings clarity and purity of fruit, with an underlying coolness that frames the wine’s aromatic precision.
In the cellar, the approach is deliberately minimal: wild fermentations, gentle extraction, whole-bunch influence depending on parcel, and a light touch throughout elevage to preserve fragility and definition. The result is a Pinot built on transparency rather than weight.
The nose opens with red cherry, wild strawberry and cranberry, lifted by rose petal, subtle spice and a faint earthy perfume. The palate is silken yet structured, with fine, powdery tannins and a flowing line of acidity that carries the wine with quiet persistence. There is a gentle savoury undertow — dried herbs, forest floor and tea leaf — that adds depth without disrupting its clarity.
A Pinot Noir of delicacy and poise, made to be opened in its youth but carrying enough structure to evolve gracefully in the short term.
