Domaine Rolet has been one of the reference estates of the Jura since 1942, producing wines that express the region's distinctive terroirs with remarkable precision. L'Étoile is a small appellation near Plainoiseau, named for the tiny star-shaped fossilised pentacrines that litter its grey Lias marl soils, covered with a thin layer of limestone-rich scree. It is one of the Jura's most singular terroirs.

En Novalet is the specific parcel from which this 100% Chardonnay is sourced. The grapes are hand harvested and sorted, then fermented and aged for 12 months in oak barrels. The oak adds texture and subtle savoury complexity without overwhelming the character of the Chardonnay or pushing the wine into a heavily oxidative style.

Green and golden apple, lemon peel, pear, white flowers, almond and flinty mineral notes on the nose, with a subtle buttery and spicy character. The palate is full but energetic, combining creamy texture with bright acidity, fine mineral tension and a distinctly saline finish. There is a gentle Jura nuttiness here, but the wine remains fresh and focused. Drinking beautifully now, with the structure to develop for 8 to 10 years.
