François Rousset-Martin Savagnin Cuvée du Professeur 2022
François Rousset-Martin has become one of the most celebrated names in the modern Jura. Descended from generations of local vignerons, he returned to his family's vineyards in 2007 and has since built an extraordinary reputation for his precise, deeply expressive wines. Working organically across remarkable parcels surrounding Château-Chalon, François brings a distinctly Burgundian approach to the region, vinifying each vineyard separately and favouring long élevage in old oak. His topped up Savagnins are among the most compelling expressions of the variety being made today.
Cuvée du Professeur comes from Sous Roche, the prestigious vineyard directly beneath the imposing limestone cliffs of Château-Chalon. Named after François's father, a former professor at the University of Dijon who owns the vines, this is one of the domaine's most remarkable wines. Although the vineyard qualifies for Château-Chalon, François chooses to keep the barrels topped up rather than ageing the wine oxidatively under flor, revealing an entirely different expression of this legendary terroir.
The 2022 is extraordinary. Lemon tart, ripe yellow apple, jasmine and crushed flint lead into a beautifully concentrated palate with remarkable precision and finesse. There is incredible energy here, with vibrant acidity, an almost crystalline minerality and a deep, persistent salinity. Powerful yet remarkably elegant, with an exceptionally long and complex finish. A profound Savagnin with enormous ageing potential.
