Françoise Martinot Champagne Bistrotage 2020
Deep straw-gold with a fine, lively mousse, Bistrotage 2020 is a characterful, small-production grower Champagne from the Côte des Bar, produced by Françoise Martinot with a focus on texture, depth and gastronomic expression.
The cuvée is based on 100% Pinot Noir (Blanc de Noirs) from the 2020 vintage, a year that delivered ripe fruit concentration while retaining natural freshness and structural clarity.
Vinification is low-intervention and parcel-led, with fermentation using indigenous yeasts and élevage in a combination of stainless steel and oak to build layered complexity. The wine undergoes extended lees ageing in bottle and is bottled with a low dosage (Extra Brut style) to preserve tension and site definition.
The nose is expressive and savoury, showing red apple skin, citrus peel and ripe orchard fruit, layered with brioche, toasted hazelnut and subtle spice. The palate is structured and vinous, with a creamy yet precise mousse, chalk-driven minerality and a long, dry, saline finish.
