Vincent Carême is one of the leading figures of modern Vouvray, having established his domaine in 1999 with just five hectares inherited from his family. Today, he farms some of the appellation's finest vineyards organically, producing beautifully precise expressions of Chenin Blanc that have helped bring renewed attention to this remarkable corner of the Loire Valley.

His Brut Nature is made entirely from Chenin Blanc using the traditional method, with a second fermentation in bottle and extended ageing on lees before disgorgement. With no dosage added, this is a wonderfully pure expression of the variety, allowing the fruit, acidity and mineral character to shine.

Delicate aromas of white peach, citrus zest and white blossom lead into a beautifully fine and persistent mousse. The palate is fresh and elegant, with subtle notes of grilled almond, crisp orchard fruit and a lovely mineral tension. Completely dry, wonderfully balanced and remarkably long.
