Herve Dubois Tradition Brut Champagne
From the Grand Cru village of Avize in the heart of the Côte des Blancs, Hervé Dubois is a small grower Champagne house quietly producing precise, mineral-driven wines with a strong sense of place. The estate, rooted in the region since the 1920s, is now led by Nina Dubois, whose light touch and clear vision shape a style focused on purity, freshness and finesse.
The Tradition Brut is the house’s calling card, a classic blend of 50% Chardonnay, 25% Pinot Noir and 25% Pinot Meunier that balances the brightness and tension of the Côte des Blancs with the depth and structure of the Pinots. Fermented with partial malolactic on the Chardonnay and full malo on the Pinots, then aged on lees for 24 to 36 months, the wine shows both energy and roundness without losing its edge, finished with a dosage of 5–6 g/L that keeps everything tight and precise.
In the glass, it opens with lifted citrus, green apple and a subtle floral note. The palate is crisp and focused, driven by a lemony line of acidity, layered with a gentle creaminess from lees ageing and finishing with both freshness and quiet power.
