Raul Moreno Destellos 2023 Palomino Sanlucar de Barrameda
The still white 2023 Destellos was produced with 75 percent Palomino and 25 percent Arinto from Pago Miraflores and Pago Balbaína in Sanlúcar, an entry level to their wines from Jerez, fresh and light with a short skin maceration. It fermented and aged in large oak barrels that in the past had contained Amontillado and Manzanilla and were topped up every week. It has 12 percent alcohol with a pH of 3.3 and 5.5 grams of acidity, with freshness and character, classical notes of esparto grass and a hint of cloves, faintly medicinal, with a gentle mouthfeel and a dry and slightly bitter finish. 3,500 bottles produced. Destellos offers a still wine perspective on the Jerez region, drawing from historic pagos in Sanlúcar and working with Palomino in a way that bridges table wine and traditional fortified influence.
The use of seasoned barrels that previously held Manzanilla and Amontillado brings a subtle oxidative complexity, adding layers of savoury character while maintaining freshness and lightness.
The 2023 shows a delicate balance between citrus, dried herbs and saline notes, with a gently textured palate and a clean, slightly bitter finish that nods to its Sherry heritage.
