Valentin Morel took over his family estate in Poligny in 2014 and converted the vineyards to biodynamic farming, developing a style of Jura wine that combines natural winemaking with a strong sense of place. His wines are fermented with indigenous yeasts and bottled unfined, unfiltered and without sulphur additions.

En Boutasse is a 1 hectare parcel planted to Savagnin and Poulsard, with vines over 40 years old growing on Lias marl soils. The vineyard returned to the family in 2022 and was subsequently converted to biodynamic farming.

The 2023 Savagnin En Boutasse is made with whole bunch Savagnin macerated on the skins for three weeks, with one third Savagnin Rose. The extended skin contact brings texture and gentle phenolic grip while retaining the natural freshness and mineral character of the Jura.

Tangelo, pawpaw, spiced quince and Cara Cara orange lead into orange marmalade, papaya skin and subtle spice. There is a beautiful bitter citrus edge and gentle tannic grip, before a streak of Jura minerality cuts through the palate.

Textural, aromatic and slightly sultry, with serious freshness underneath. A compelling skin contact Savagnin that sits somewhere between orange wine and classic Jura, with plenty of personality and length.
