Jean-François Ganevat is one of the Jura’s most revered vignerons, a 14th-generation grower whose wines have become cult references for their precision, individuality and extraordinary drinkability. Working organically and biodynamically, Ganevat combines meticulous vineyard work with a minimalist approach in the cellar, producing wines that possess Burgundian finesse while retaining the freshness, energy and unmistakable personality of the Jura.

This Crémant du Jura is a beautifully serious expression of sparkling Jura, made from 100% Chardonnay grown organically and harvested by hand. The fruit is directly pressed before the base wine is matured for 24 months on its lees. It is then bottled for its secondary fermentation and given a further 24+ months ageing on the lees in bottle, resulting in an unusually long and complex élevage for a Crémant.

Bottled as a Brut Nature with zero dosage, there is nowhere for the wine to hide: the quality of the fruit and the precision of the winemaking are completely exposed. The extended lees ageing gives the wine a fine, creamy texture and subtle autolytic complexity, while the absence of dosage preserves its natural freshness and mineral character.

Expect the kind of combination that makes Ganevat’s sparkling wines so compelling: fine bubbles, bright citrus, green apple and orchard fruit, with hints of brioche, nuts and subtle savoury complexity developing beneath the surface. The palate is taut and energetic but beautifully textured, finishing with the distinctive saline character of Jura Chardonnay.

More serious and gastronomic than the average Crémant, this is a bottle that can happily move beyond aperitif territory and onto the dinner table.
