Renaud Bruyère and Adeline Houillon are young winemakers from the Jura working just 4.5 hectares of low-yielding vines across four plots within the Arbois and Arbois-Pupillin appellations. Based in Pupillin, the self-proclaimed World Capital of Ploussard, they produce a tiny quantity of wines that reflect the extraordinary complexity of their terroir: soils ranging from multi-coloured marls and limestone scree to clay and calcareous clay, across sites including En Aspis, La Croix Rouge, Les Tourillons, and Les Nouvelles. Their vines span from 25-year-old Chardonnay to 65-year-old Savagnin and Chardonnay, with each lieu-dit contributing its own distinct character, from the salinity and tension of Les Tourillons to the rounder, more approachable fruit of La Croix Rouge.

The En Aspis lieu-dit in Pupillin is renowned for its heavy multi-coloured Triassic clays and marl. The grapes are gently destemmed by hand in the vineyard, then placed in tank for a period of semi-carbonic maceration, which in 2021 lasted 27 days. Pressing is manual and gentle, using an old press, with alcoholic fermentation completed after pressing. At bottling, a tiny amount of CO2 from fermentation is captured to aid preservation, leaving a slight prickle that dissipates in the glass. The colour is light and ethereal, typical of the finest Ploussard. Unfiltered. 12% alc.
