Domaine Jaeger Defaix is a small estate in Rully, in the Côte Chalonnaise, with family connections to the Defaix name well established in Chablis. The domaine farms with care and low yields, bringing the same commitment to organic viticulture and minimal intervention winemaking that defines the broader Defaix approach. Rully is one of Burgundy's most underrated appellations, producing Chardonnay of genuine finesse and mineral precision at a fraction of the price of the Côte de Beaune.

This village Rully Blanc is a new wine in the portfolio, sourced from a parcel of vines located just below the Premier Cru Vauvry in the lieu-dit of Bas de Vauvry. The fruit is whole-bunch pressed, wild fermented and aged in older 500-litre barrels for 12 months. Low-managed yields lend calibrated acidity, elegant shape and length to the finished wine.

Enticing floral and stone fruit flavours knit together by fine acidity, with a mineral note running through the citrus-flecked palate. A great value white Burgundy that will provide enormous drinking pleasure from day one, with the structure to develop further in bottle.
