Entropy Savagnin 2024 Gippsland
Entropy is the deeply personal project of Ryan Ponsford, one of Australia's most exciting young winemakers. A former artist who found his calling in wine, Ryan established his project in West Gippsland, a beautiful and relatively unexplored cool-climate region of Victoria. His approach is thoughtful and hands-on, with a strong focus on regenerative farming, healthy soils and minimal-intervention winemaking. His remarkable work earned him the Young Gun of Wine award in 2022.
The 2024 Savagnin comes from Willow Grove Vineyard in Gippsland, where own-rooted vines planted in 2001 grow without irrigation on a north-facing slope of red volcanic and grey soils. Savagnin, the ancient Jura variety responsible for some of France's most fascinating whites, has found a wonderful home in this cool corner of Australia.
The fruit undergoes indigenous fermentation in barrel before spending 12 months on lees in French oak barriques and older puncheons, with just 10% new oak. This patient approach gives the wine its beautiful texture and complexity without sacrificing freshness.
The result is a wonderfully expressive Savagnin, with lemon blossom, quince, green apple and citrus peel alongside subtle beeswax, hay and flinty mineral notes. The palate is generous and layered, with a lovely glossy texture, piercing acidity and a long, savoury finish marked by oyster-shell salinity.
A seriously compelling Australian Savagnin that combines the textural richness and savoury complexity we love about the Jura with the purity and energy of Gippsland. One for lovers of distinctive, characterful white wines.
