Since 2021, Henri Chauvet has been the custodian of 10.5 hectares of diverse vineyards in Boudes, Auvergne, with a focus on Gamay, Pinot Noir and Chardonnay. Working across the steep slopes surrounding his home, Henri began the conversion to organic farming the moment he took over the vineyards, guided by a deep respect for terroir and a desire to let the character of these remarkable hillsides speak clearly through his wines.

Boudes remains a little-known village outside France, but locally it has a reputation for producing some of the most expressive Gamays, Pinot Noirs and Chardonnays in the Auvergne. Chauvet is part of a new generation putting this volcanic corner of France firmly on the radar.

Qui Sait is his 100% Gamay Blanc de Noirs, made from Domaine fruit and bottled as a pét-nat. It is an unusually refined expression of sparkling Gamay, combining the bright, crunchy fruit of the variety with the precision, tension and mineral drive more often associated with serious traditional-method sparkling wines.

The nose is lifted and elegant, with wild strawberry, redcurrant and delicate red berries alongside floral notes and a subtle volcanic minerality. The palate is beautifully taut and energetic, with crisp acidity, fine bubbles and a distinctly saline character. There is real vinous depth beneath the mousse, while the finish is dry, persistent and remarkably clean.

Unfiltered and made without additives, Qui Sait retains an incredible sense of freshness and spontaneity, but with a level of finesse that elevates it well beyond the typical pét-nat. A serious Blanc de Noirs from an increasingly exciting producer, and a wonderful demonstration of just how sophisticated Gamay can be when it comes from the volcanic slopes of Boudes.
