Jean-François Ganevat is one of the Jura’s most revered vignerons, a 14th-generation grower whose wines have become cult references for their precision, individuality and extraordinary longevity. Working organically and biodynamically across an exceptional collection of old-vine parcels, Ganevat combines meticulous vineyard work with a minimalist approach in the cellar. His wines possess a Burgundian finesse while retaining the freshness, energy and unmistakable character of the Jura.

Les Varrons Vieilles Vignes is one of Ganevat’s emblematic Chardonnay cuvées, made from 100% Chardonnay from very old vines planted on the limestone and marl soils of the Jura. The combination of ancient vines, naturally low yields and Ganevat’s extraordinarily careful élevage gives the wine remarkable concentration without sacrificing freshness or precision.

The 2020 is a beautifully detailed expression of Jura Chardonnay, with a long, patient élevage allowing the wine to develop considerable depth and texture. The aromatics move between preserved citrus, white-fleshed fruit, fresh apple and pear, with notes of almond, hazelnut, white flowers and wet stone emerging with air.

On the palate, this is where the old vines really announce themselves: dense and concentrated but incredibly precise, with a fine mineral tension running through the wine. Bright acidity keeps the richness beautifully controlled, while the long finish is marked by citrus, chalky minerality and a distinctly saline character.

There is an almost crystalline quality to the wine, with layers revealing themselves slowly in the glass. It has the richness and depth expected from mature Jura Chardonnay, but also the tension and finesse that make Ganevat’s whites so sought-after.
